Tomato Salsa Fiesta

What you need:

+ 1 3/4 lbs. fresh tomatoes (about 4 medium)
+ 2 cloves of garlic
+ 1 Tbsp. lime juice
+ 1/2 tsp. cumin
+ 1/2 tsp. salt
+ 2 Tbsp. vegetable oil
+ 1 c. diced red onion
+ 2 Tbsp. chopped fresh cilantro or parsley
+ 1 whole jalapeno pepper

What to do:
1. Peel, seed, drain, and finely dice tomatoes. Remove seeds from pepper and chop finely.
2. Combine finely chopped garlic, lime juice, cumin and salt; beat in oil. Gently toss with remaining ingredients. Marinate at room temperature for 1 hour or several hours in the refrigerator.
