Turkey Stuffed Green Peppers

What you need:

+ 1 lb. ground turkey
+ 1/2 c. instant rice
+ 1/2 c. carrots, grated
+ 1/4 c. onion, chopped
+ 3 Tbsp. parsley, chopped
+ 1 to 2 cloves garlic, minced
+ 1 tsp. dried oregano leaves
+ 1/2 tsp. each salt and pepper
+ 1 can (8 oz.) tomato sauce
+ 2 large green peppers
What to do:
1. In a medium bowl combine turkey, rice, carrot, onion, parsley, garlic, oregano, salt, pepper and tomato sauce. Mix to blend thoroughly.
2. Cut each pepper in half lengthwise. Remove and discard seeds and membranes.
3. Divide turkey mixture between peppers. Place in a baking dish and cover.
Bake in a preheated 350°F oven for about 1 hr., or until the internal temperature reaches 165°F and the peppers are tender.
