What you need:
** 1 1/2 c. Gluten-Free Flour Blend * 1/2 c. brown sugar * 2 tsp. baking powder * 1 tsp. ground cinnamon * 1/2 tsp. xanthan gum ( check your store's Natural Foods section) * 1/4 tsp. salt * 1/4 c. melted butter (or applesauce) * 2 eggs * 1/2 c. milk (or milk substitiute) * 1 apple, peeled and diced
** Gluten-Free Flour Blend ingredients: * 6 cups Brown or White Rice Flour * 2 cups Potato Starch * 1 cup Tapioca Flour (whisk ingredients together, store room temp)
** For 1 1/2 cup gluten-free flour blend: * 1/2 cup rice flour * 1/2 cup cornstarch * 1/2 cup tapioca starch/flour * 1 Tbsp potato flour
What to do:
1. Combine flour blend, sugar, baking powder, cinnamon, xanthan and salt in a bowl. 2. In a large bowl, mix eggs, butter, (or applesauce), milk, and diced apple. 3. Stir in dry ingredients. 4. Spoon into oil sprayed muffin pan. Bake at 350° for 40-45 min. or until a toothpick inserted in the center comes out clean.
