* 1 3/4 lbs. fresh tomatoes (about 4 medium) * 2 cloves of garlic * 1 Tbsp. lime juice * 1/2 tsp. cumin * 1/2 tsp. salt * 2 Tbsp. vegetable oil * 1 c. diced red onion * 2 Tbsp. chopped fresh cilantro or parsley * 1 whole jalapeno pepper
What to do:
1. Peel, seed, drain, and finely dice tomatoes. Remove seeds from pepper and chop finely. 2. Combine finely chopped garlic, lime juice, cumin and salt; beat in oil. Gently toss with remaining ingredients. Marinate at room temperature for 1 hour or several hours in the refrigerator.
